COOKING WITH KAMI
Main Dishes
Seafood Stirfry:
One of Kami's favorite foods is squid! Buy whole squid
and slice into strips-the tentacles are the best part-nice and crunchy! Sautee
garlic and onions in olive oil. Add and stir fry the squid, shrimp, and
Kami's
Special Ingredient: a little Bacon! Add oyster sauce,
teriyaki, a little salt and sugar. When the seafood is done, add the greens. Kami likes
the Vietnamese greens, Ramón. Serve with Jasmine Rice.
Kami loves to marinate meats!

Duck or Quail with Special Sauce (Lime and Salt),
Black Tofu (Duck Livers),
Vietnamese Ban Tran and Ban Xeo,

and Fried Rice.
Soups
Vegetable Soup:
Kami loves cutting up vegetables! Kami's Special Ingredient: her Special Table! It's just the right size for her wheelchair. First boil some nice beef bones in a big pot of water. Then cut up any vegetables around the house and make a big pot of vegetable soup!
Shrimp Bisque Asian Style:
Peel shrimp, set aside. Blend the shells and heads in a blender until they are paste. In a wok, fry some onions in butter then add the shrimp paste and fry until browned. Add chicken broth and water to the mixture, bring to a boil, then let simmer. Strain the soup. Put the strained liquid into a blender and add Kami's Special Ingedient: Sticky Rice! Use already cooked sticky or sweet rice instead of cream to make this a healthier, thicker soup. Blend the rice and soup until they are a thick liquid. Pour the soup back into the wok and add the shrimp. Cook until the shrimp are done. Pour into bowls and serve.

Veggies
Baked Potato Slices:
Slice Potatoes. Place in baking pan. Sprinkle with
olive oil, salt, pepper, and Kami's Special Ingredient: Sesame Paste!
Bake until soft in the middle and golden brown on top.
Baked Eggplant Slices:
Slice Eggplant. Plunge into cold salted water to get
rid of the bitter taste. Place in baking pan. Sprinkle with olive oil, salt,
pepper, and Kami's Special Ingredient: Sesame Paste! Bake until soft in
the middle and golden brown on top. Bake a little longer than you think.
Kami's other favorite Veggies include:
Corn on the Cob with Salt and Butter,
Cucumbers with Special Sauce (Lime and Salt),
Pea Pods, Green Beans.
Desserts
Cookies:
Want them fast, want them fresh baked! Kami buys refrigerated
cookie dough, cuts into slices, places on cookie sheet, bakes according to
directions on package.
Kami's Special Ingredient: Sprinkles!
Fruit Salad:
For a healthy desert, find whatever fruits you have in
the house. Kami likes peaches, apples, bananas, and strawberries. Slice into cubes
and place in a bowl of fresh lettuce.
Kami's Special Ingredient: Fresh Squeezed Lime Juice on top!
Fruit Compote:
Inspired by Kami's Great Grandma Florence. Kami slices
fresh fruits, about 2 of everything. Place sliced fruit into in large frying
pan. Add chunks of butter, sprinkle on brown sugar, vanilla, cinnamon and
honey. Cook until tender.
Kami's Special Ingredient: Fresh Squeezed Lime Juice!
Of Course Ice Cream Sundaes are great!
